Taco Soup Recipe
I’m bummin’ this week about not having any good grocery deals. Oh well, I guess it’s great to have weeks where we just don’t have to shop at all. That’s the best way to save money!
I took a huge package of chicken out of the freezer the other day and put it in the fridge. The package had a hole in it so it dripped all in the fridge. I hate having to bleach the fridge unexpectedly. After that huge mess I just decided to cook all 11 breast halves. I was sick of messing with the raw chicken and sick of the smell of bleach. As I cooked it I was wondering what easy meal I could make with it. I’m not much of a soup person, but I do like this recipe a lot. I make it and can eat bowl after bowl after bowl.
I know everyone has their own favorite taco soup recipe, but in case you don’t and you’d like to try it, here’s mine. It’s one of those “everything but the kitchen sink if you’d like” kind of recipes. Here’s the basic recipe (excellent!)
TACO SOUP
Roasted chicken (diced)
2 Cans Ranch Style beans (undrained)
2 Cans corn (undrained)
1 Can cream of chicken soup
1 Can diced tomatoes
1 t Garlic powder (or to taste)
1 T Cumin(I like cilantro as well)
You can add a cup of water if you like it more soupy. I prefer the more hardy consistency.
Bring to a boil and simmer. So easy. So yummy.
